CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. 1 tablespoon of butter
1 tablespoon minced garlic
1 jalapeno, seeded and chopped
1 cup unsweetened almond milk
1/4 cup heavy cream
3 ounces cream cheese
1 (4 ounce) can green chili
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon onion powder
1 cup grated cheddar cheese
5 cups chopped chicken
1/2 cup grated cheddar cheese (for topping)

Instructions

  • In a large skillet over medium heat, melt the butter, add the garlic and jalapeno, and sauté for 30 seconds.
  • Add the almond milk, cream, cream cheese, unfiltered green pepper, spices, and 1 cup of cheddar cheese.
  • Whisk until the mixture is smooth and the cheese has melted.
  • Stir in the shredded chicken and top with the remaining cheddar. Reduce heat to minimum, cover and simmer for 10 minutes.
  • Garnish with chopped scallions, additional jalapeno slices, or avocado.
