CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Mix until everything is evenly combined. Use a 1/4 cup to scoop cauliflower batter. Use the back of a spoon to compress and compact cauliflower mixture into the measuring

Yes! You read that right, you can now make low carb, sugar free cookies with boxed cake mix! You may already be aware of the easy and delicious cookie hack. You simply take a box cake mix, any flavor, and add eggs and oil. Voila! Super effortless cookies made from boxed cake mix!

Now, you can make gluten free, sugar free, keto-friendly cookies by picking up a box of Keto Cake Mix! This is the brand I used in the Classic Yellow flavor. While this might be hard to find it some areas I picked it up at my local Kroger, and have also seen it at Walmart.

Ingredients for Gluten Free Cake Mix Cookies

  • Keto Cake Mix: this is the variety I used and this is what the nutritional information is based on.
  • Eggs: size large eggs are needed for this recipe.
  • Vegetable Oil: OR melted butter, either option works for this recipe, you will just need 1/2 cup of the liquid so make sure the butter is not solid.
  • Sugar Free Chocolate Chips: I love the brand Lily’s and they now have many flavors such as white chocolate, peppermint, salted caramel and butterscotch.

Other things that will make this recipe easier for you is a large baking sheet, lined with a silicone mat. These silicone mats are used daily in my kitchen. They help things cook more evenly, provide easy clean up, and are reusable so they are more sustainable than throw away liners.



How do you make Keto Cake Mix Cookies?

  • Add the eggs to a large mixing bowl and beat until smooth. Stir in the cake mix and oil or melted butter, and vanilla extract (if using). Stir until a smooth, thick dough forms.
  • Fold in the chocolate chips. Chill the dough 10 minutes.
  • Use a small cookie scoop and place the dough on the lined baking sheet (I got 30 cookies). Very lightly press the dough down.
  • Bake 10-12 minutes until they begin to brown slightly. Allow them to cool at least 10 minutes on the baking pan.

What flour is in Keto Cake Mix Cookies?

If using a different cake mix this will vary, however the boxed cake mix I used has a mixture of almond and coconut flour. If you are allergic to coconut flour I suggest these Keto Cookies, that are made with almond flour only.

What do these Cookies Taste Like?

These low carb delights are very soft and fluffy. These are not crisp cookies. In my opinion the cake mix does have a slight sweet, coconut smell as they cook. However, I didn’t find the coconut flavor to be particularly noticeable.

Tips for the Best Cake Mix Cookies

  • The batter is thick, that is okay! These are thick, soft, chewy cookies. You might be tempted to add another egg or more oil to thin the batter, don’t!
  • Chill the batter. This is a gluten free dough which means it has very little elasticity. Cooling the dough will help achieve the right texture.
  • Lightly press the dough. The dough will spread some, but not a ton. Just lightly press the dough with the bottom of your measuring cup to get nice, uniform cookies.
  • Mix it up! Use different flavors of sugar free chocolate chips or other keto-friendly additions such as extracts, pecans or almonds.

  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup Lily’s Sugar Free Chocolate Chips (any variety)

  3. Fold in the chocolate chips. Chill the dough 10 minutes.
  4. Use a small cookie scoop and place the dough on the lined baking sheet (I got 30 cookies). Very lightly press the dough down.
  5. Bake 10-12 minutes until they begin to brown slightly. Allow them to cool at least 10 minutes on the baking pan, they will continue to cook on the hot pan.
