CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Air Fryer Roasted Cabbage

Air Fryer Roasted Cabbage

I love how Air Fryer Roasted Cabbage comes out with deliciously crispy edges and caramelized toppings. My kids were obsessed with picking up the crispy sides and eating them like candy.

 

Ingredients

  • 1 medium collard green cabbage, sliced ​​vertically from the head of the cabbage.
  • 2 tablespoons of olive or avocado oil.
  • Salt and ground pepper to taste
  • 1 TBS spice vegetable mix. What I use is Miss Dash Unsalted Seasoning Blend or Wellsley Farms Organic Vegetable Blend.
  • 1 tablespoon fresh parsley, finely chopped (for garnish, optional)
  • 2 tablespoons chopped cooked bacon or bacon chunks (optional)

Instructions

  1. Slice the collard greens vertically into wedges from the head of the cabbage. About 3/4 to 1 inch thick.
  2. Sprinkle with salt and pepper to taste.
  3. Drizzle the cabbage steak pieces with the oil and sprinkle with the spice mix.
  4. I like to use a food silicone brush to coat the cabbage steaks evenly and then spread them out on the baking tray or fryer basket so they don’t overlap.
  5. Air fry mode at 400F (200C) for 5 minutes. Then turn each piece of cabbage to the other side and air fry for another 5 minutes or until the edges are golden and crispy.
  6. Depending on the thickness of your cabbage steak and the preparation you want; you can fry more



notes

  • Don’t worry if the edges look burned. They can be easily removed, and the cabbage will be softer.
  • You can decorate the roasted cabbage in the deep fryer as you wish.
  • A few suggestions: sprinkle with mayonnaise, sprinkle with cheese, but 3-4 minutes before the end.
  • My favorite is the sprinkling of bacon pieces.
  • Or use your favorite seasoning and sprinkle with oil.
