CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Keto Buffalo Chicken Bowl

Need something suitable, healthy and delicious for lunch? Don’t look elsewhere! This chicken bowl has a good protein-vegetable ratio with the perfect balance of crunch and salty goodness. Yum!

Preparation

Chicken:

  • 12 ounces cooked chicken
  • 3 tablespoons butter, melted
  • 1/4 cup hot sauce


Salad:

  • 12 ounces lettuce, chopped
  • 3 ounces cooked bacon, crumbled
  • 1/4 cup banana pepper
  • 4 medium green onions, thinly sliced
  • 3 ounces cherry tomatoes, chopped
  • 1 medium avocado, chopped

Dressing:

  • 6 tablespoons of ranch dressing




Execution

  1. Measure and prepare all ingredients.
  2. Combine cooked chicken, melted butter, and hot sauce in a bowl. Mix together.
  3. Combine all vegetables in a bowl. Top with chicken and bacon.
  4. Drizzle with ranch dressing and serve.
