CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Keto Fish Casserole

Keto Fish Casserole

This is a deluxe fish stew with capers, a creamy lemon white sauce served on a bed of vegetables. I used wild Alaskan cod in this recipe, but any type of white fish will work as well, such as sea bass, grouper, halibut.

Preparation

  • 2 tablespoons of olive oil
  • 16 ounces broccoli
  • 5 ounces of spinach
  • 6 medium green onions
  • 2 tablespoons of capers
  • 1 tablespoon butter, to grease the mold
  • 24 ounces white fish
  • 1 1/4 cups heavy cream
  • 1/2 medium lemon, juice
  • 1 tablespoon of dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 6 tablespoons of butter
  • Pepper and salt to taste

Execution

  1. Measure and prepare all ingredients. Grease a baking sheet with butter and preheat the oven to 400F.
  2. Cut the broccoli into small florets, keeping the stems.
  3. Put the oil in a pan on medium heat. While hot, add the broccoli and cook until fork tender, about 4-5 minutes. Add the spinach to the broccoli and let it wilt for 45-60 seconds.
  4. Once the spinach has wilted, add the scallions and capers to the pan. Saute for 1-2 more minutes.
  5. Add the vegetables to the greased baking tray. Place the fish on top of the vegetables, covering the sides of the fish with vegetables.
  6. Mix the cream, lemon juice, Dijon mustard and chopped parsley well. Pour over fish and vegetables, then top with butter slices. Bake in the oven for 20 minutes or until the fish is flaky.
  7. Serve hot and enjoy!
