CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Keto Mozzarella Sticks

Stir-fried cheese sticks with dill
Homemade mozzarella sticks are much easier to make and taste than you would get at a restaurant!

Duration:
Preparation Time: 20 minutes Cooking Time: 10 minutes Total Time: 30 minutes Number of Servings: 12

Ingredients:

  • 12 pieces of mozzarella cheese
  • 2 eggs scrambled
  • 1/2 cup of almond flour
  • 2 tablespoons of coconut flour
  • 1/2 cup Parmesan cheese finely grated
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika optional, if you want a little heat

Instructions:

  1. Preheat the oven to 400 F or about 200 C. Cover a baking sheet of cheese with parchment paper (better than foil, as the cheese can stick to it).
  2. Beat 2 eggs in a small bowl and set aside.
  3. Place almond flour, coconut flour, Parmesan cheese, Italian seasoning, salt, garlic powder, and paprika flakes, if using, in a zip-top sandwich bag. Shake the bag until blended.
  4. Dip each mozzarella string/stick in the scrambled egg and then place in the sandwich bag. Shake the bag to cover the cheese string and set on a plate. Freeze for 30 to 60 minutes.
  5. If baking, place the mozzarella sticks on the baking sheet and bake until golden brown, about 20 minutes.
  6. If frying, heat a small amount of oil (preferably olive oil) to a depth of about 1/4 inch in a small frying pan.
  7. Heat the oil over medium heat and fry in a pan until golden brown. No need to try ‘deep frying’ them. brown all over
  8. Enjoy as is or use low-sugar marinara sauce
