CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Mix until everything is evenly combined. Use a 1/4 cup to scoop cauliflower batter. Use the back of a spoon to compress and compact cauliflower mixture into the measuring

Keto Salted Caramel Chocolate Pumpkin Muffins

These Keto Salted Caramel Chocolate Pumpkin Muffins have definitely hit the tasty jackpot!

Ingredients

  • 1/2 cup or 1 stick of melted butter
  • 2/3 cup Pyure sweetener
  • 4 eggs
  • 1 cup zucchini
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour

  • 1/2 cup of coconut flour
  • 4 teaspoons of baking powder
  • 2 teaspoons of baking powder
  • 3 teaspoons pumpkin dessert spice
  • 1 teaspoon salt
  • 1/2 cup Lily’s Salted Caramel Chocolate Cake Pieces; 1/4c on dough and 1/4c on each muffin

Instructions

  1. Preheat the oven to 350 degrees
  2. Melt the butter in a medium bowl
  3. After the butter cools, add remaining ingredients to bowl: Puree, pumpkin, vanilla, eggs, almond flour, coconut flour, 1/4 c salted caramel chocolate chips, baking powder, baking powder, pumpkin pie spice, and salt
  4. mix well
  5. Fill the dough 2/3 of the way into the greased muffin tin.
  6. Sprinkle the remaining 1/4 cup salted caramel chocolate chips over each muffin.
  7. Cook approx. 20 minutes or until a toothpick comes out clean.
