CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Low Carb Keto Cranberry Cream Cheese Danish

This Low Carb Keto Cranberry Cream Cheese Danish is sugar free, gluten free, and made with my Nut Free Fathead Dough!

Ingredients

Dough

  • 8 ounces mozzarella cheese part skim
  • 3 ounces cream cheese full fat
  • ¾ cup coconut flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum or glucomannan
  • 1 teaspoon vanilla extract
  • ½ teaspoon vanilla stevia
  • ¼ cup Swerve Confectioners sweetener
  • ¼ teaspoon salt

Filling

  • 8 ounces cream cheese
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon vanilla stevia
  • ½ cup fresh cranberries
  •  cup Sukrin Fiber Syrup Clear or Lakanto Sugar Free Maple Syrup

Optional Icing Topping

  • 3 tablespoon heavy cream
  • tablespoon unsweetened coconut milk
  • 2 ounces cream cheese full fat
  • 2 tablespoon Swerve Confectioners sweetener
  • ½ tsp vanilla extract

Instructions

  • Preheat the oven to 400 degrees F.
  • New method: Place all ingredients into a food processor and process until combined. Remove and place into a microwavable bowl and microwave for 2 minutes or double boiler to melt mixture over low heat on the stove. Stir again to combine.
  • Line a baking sheet with parchment paper and roll out the dough to an oval shape. You can wet hands and flatten the dough or place another piece of parchment over the dough and use a rolling pin. Set aside to make filling.
  • Add the cream cheese, egg yolk, vanilla extract and stevia to a stand mixer and blend on high until smooth. Add cranberries to a small bowl and mix with Sukrin syrup.
  • Spread the cream cheese mixture down the middle of the dough. Top cream cheese with cranberries.
  • Cut diagonal strips of dough lengthwise on each side of the oval shape and overlap the strips towards the center.
  • Bake for 12-15 minutes until golden brown. Allow to cool then refrigerate.
  • When ready to serve, add optional topping if desired. Simply place all ingredients into a blender and blend until smooth. Drizzle over the danish and enjoy!
