CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions.   • 2 kilos ground beef
  • 2 large bell peppers green, yellow, or red (diced)
  • 1 large onion (diced into small cubes)
  • 8 oz provolone
  • 1 tablespoon of salt (adjust to your taste)
  • 1 teaspoon paprika (adjust to your taste)
  • 8 large tortillas (wheat or white)

Instructions

  1. Cut the mince into small pieces and cook in a large skillet. Season with salt and pepper.
  2. Add the onion and bell pepper. Cook until the vegetables are soft.
  3. Add the cheese and stir until the cheese is completely melted. Turn off the heat.
  4. Lay all 8 loaves flat on the work surface. Divide the beef mixture evenly and wrap each tortilla.
  5. You can serve them right away. You can also fry both sides of the wrap in a preheated skillet or grill to create that extra crust.
