We love two things in this house: Mexican food and one-pan dinners. This recipe satisfies both! We often enjoy this Single Pan Cheese Fajita Chicken, but while we’re entertaining some picky family members, we need to simplify things a bit.
This dish is ready in 20 minutes and is as easy as can be. We cut the boneless, skinless chicken into small pieces so that it cooks quickly, then in the same pan we make the delicious cheesy sauce. Just cleaning a pan and preparing it super fast makes it the perfect meal after a busy weeknight!
Pollo con Queso is super family friendly and you can easily adjust the amount of seasoning to your preferences. For less picky family members, this would be a great addition too if you want to fry some chili on the side!

Pollo con Queso is a popular Mexican dish that literally means “chicken with cheese.” It’s usually served with rice (“arroz con queso”), but we make soft chicken chunks and a delicious cheesy dip to make everything keto! Chicken: I used boneless, skinless chicken breast, but you can also use thighs or beef. These will be cut into bite-sized pieces to help the recipe cook quickly.
Spices: Chili powder, paprika, garlic powder, onion powder, cumin, thyme, salt and pepper
Green pepper: I used mild, but if you really like spicy food, you can use it hot.

Olive oil: for frying the chicken; you can use butter, ghee, coconut oil or other cooking oil.

How to make Pollo con Queso
This is such a simple recipe — perfect for beginner cooks as there aren’t many steps! The finished result, though, is super satisfying.
Start by combining all the spices in a small bowl, then set this aside. Heat a large skillet over medium heat, then add your olive oil. Add the bite-sized chicken, sprinkle with seasoning, and toss to coat the chicken evenly. Fry the chicken for 3-4 minutes on each side until cooked through, then remove from the pan and set aside.
Reduce the heat to a minimum, then add the green peppers, cream cheese, and cream. Mix to make a smooth sauce with a few clumps. Add the shredded cheese in small increments (about 1/2 cup at a time), stirring constantly. Stir until all the cheese is melted and added to the sauce. If you like a thinner sauce, add additional cream or milk until you like it.
Finally, add the chicken to the skillet, stirring to coat every piece of the queso. Serve now!

You can also place the covered pan in the oven at 350 degrees F and let it heat for about 10 minutes.
You can even serve this as part of a dinner buffet! Transfer the cooked pollo con queso to a slow cooker and keep it ‘warm’ so people can serve themselves. If you cut the chicken into pieces, you can even turn it into a sauce!

Instructions
- Combine all the spices in a small bowl and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken to the hot skillet and sprinkle with seasonings. Toss to coat the chicken evenly on all sides. Fry for 3-4 minutes until the chicken is cooked through on both sides. Remove from pan and set aside.
- Turn the heat down to low. Add the green peppers, cream cheese, cream, add the grated cheese in small increments (about 1/2 cup at a time). Stir the queso constantly until all the cheese is used, until the cheese melts. Add additional heavy cream or milk until you reach your preferred consistency.
- Add the chicken to the skillet and toss in the queso. Serve now.
