CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Amazing Keto Chocolate Cake

I was pleasantly surprised to find that this recipe yielded one of the best keto chocolate cakes I’ve ever tasted. It is as moist as mudcake but has the fluffiness of a chocolate cake. I love how much height was achieved (keto cakes can be a bit flat).

Serves 8 (1 layer) or 16 (2 layers)

Ingredients for Single Layer Cake:
1 ½ cups/168g fine Almond Flour
¼ cup/25g Cocoa Powder
2 tbsp/15g Dutch Cocoa/ regular
2 ¼ tsp/10.58g Baking Powder
½ tsp/3g Salt
1/3 cup/80ml Water
3 Eggs
1/3 cup/67g Sweetener
1 ½ tsp Pure Vanilla

*I meant to say in the tutorial, when you are about to remove the cake from the cake tin after its cooled, run a knife or thin-set spatula gently between the cake and the tin. We were laughing at my husbands technique and that distracted me from giving you this tip. The cake is very soft, so be gentle*

Ingredients for Double Layer Cake:
3 cups/336g fine Almond Flour
½ cup/50g Cocoa Powder
4 tbsp/30g Dutch Cocoa/ regular
4 ½ tsp/21.16g Baking Powder
1 tsp/6g Salt
2/3 cup/160ml Water
6 Eggs
2/3 cup/134g Sweetener
3 tsp Pure Vanilla

Cream Cheese Frosting Ingredients:
*I found this amount enough for a double layer cake, as shown in the video*
8oz/225g Cream Cheese
½ cup/50g Cocoa Powder
2oz/56.7g melted Chocolate (optional)
¼ cup/56.7g Butter, softened
2 cups/330g Powdered Sweetener
1 ½ tsp Vanilla
2 + 2 tbsp hwc + water
½ cup Warm Water
