CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Keto Breakfast Grits

Grits is one of those recipes I’ve missed ever since I’ve been on keto. Coming with 38 grams of carbs per cup, grits just don’t make the cut for keto. That’s where these keto breakfast grits come into play. Made with cauliflower rice, hemp hearts, mushrooms, and cheddar cheese, these will not only satisfy your craving for grits, but you won’t have to sacrifice all those carbs.

These grits take less than 15 minutes to make, perfect for a satisfying breakfast before starting your day or heading off to work.

Yields 2 servings of Keto Breakfast Grits

Preparation

  • 2 spoonful butter
  • 2 cups cauliflower rice
  • 1/4 cup hemp hearts
  • 4 ounces cremini mushrooms
  • 1/4 teaspoon garlic powder
  • Pepper and salt to taste
  • 1/4 cup heavy cream
  • 1 cup of almond milk
  • 2 ounces cheddar cheese




Execution

  1. Gather and prepare all the ingredients.
  2. Place 2 pans on the stove over medium heat. Put half of the butter in each pan.
  3. Add the cauliflower rice and hemp hearts to a pan and sauté for 2-3 minutes. In the other pan, sauté the mushrooms for 2-3 minutes, or until cooked but still firm. Season the mushrooms with salt and pepper and set aside.
  4. Add the garlic powder, salt and pepper, cream and almond milk to the cauliflower rice. Mix it well. Turn the stove to medium-low and cook until the mixture thickens. Add a small amount of almon milk if needed to prevent burning.
  5. Turn off the stove and stir in half the grated cheese.
  6. Add the sautéed mushrooms and the rest of the shredded cheddar cheese.

This makes a total of 2 servings of Keto Breakfast Grits. Each serving yields 484 calories, 43.1 g fat, 8.1 g net carbs and 17.8 g protein.
