CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. Keto Sun-dried Tomato Chicken

This is the sundried tomato with garlic parmesan chicken and you will love the variation. Parmesan, garlic, and sun-dried tomatoes make the perfect creamy sauce. With the addition of creamy and stir-fried chicken, there’s a delicious Keto Sun-Dried Tomato Chicken that will be loved by the whole family.

The secret to making this chicken super delicious is using lots of garlic. We usually use at least 3-4 cloves but if you are not a fan of garlic you should use at least 2 cloves. We use heavy cream, which is a great keto option Basically, I like to use heavy cream (great keto option) but you can even replace half or half the heavy cream with chicken stock or water. You may also want to add baby spinach to the sauce, which will give it a cool color and texture, but this is completely optional.

To serve:
If you want to make a complete “one pan” meal, you can add 2-3 cups of cooked pasta to the pot and mix well with the sauce or serve the chicken over the pasta.
For low-carb or keto: Steam the zucchini noodles in the microwave on high for 2 minutes and serve the chicken over the zucchini noodles. Chicken can also be served with steamed vegetables on the side.

Ingredients

4-6 (6 oz) thinly pounded boneless and skinless chicken breasts
salt and pepper
2 tablespoons Butter or olive oil
3-4 cloves of chopped garlic
1-2 cups chopped spinach optional
1 cup whipped cream/cream
diced sun-dried tomatoes packed in 1/4 cup oil
1/4 cup grated Parmesan cheese



Instructions

Finely beat the chicken with a rolling pin and season with salt and pepper.
Take a pan and heat 1 tbsp. In a large skillet over medium-high heat, put butter or olive oil and seared chicken and chicken for 4-5 minutes on each side. Now remove the chicken from the pan and set it aside.
Slow down the heat and add the remaining 1 tbsp. butter in the same pan. Add the garlic and sauté for 30 seconds until the garlic turns brown; Add heavy cream, parmesan cheese, sun-dried tomatoes, spinach and mix well.
Now put the chicken back in the pan and cook for another minute and remove from the heat. Serve instantly with steamed vegetables, salad, pasta, zucchini noodles or rice.
