CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Spaghetti in a lemon cream sauce with roasted cherry tomatoes
Keeping it simple tonight with this plate full of creamy spaghetti


INGREDIENTS

  • 3 tbsp vegan butter
  • 3 tbsp flour
  • 300ml + ca. 100ml oat milk
  • Juice of 1/2 lemon + more to taste
  • Lemon zest
  • Pinch of nutmeg
  • 1 tsp. vegetable broth powder
  • Salt and pepper

instructions

Melt the butter in a saucepan over medium heat
Once it melts, add the flour and whisk everything together until smooth.
Add 300 ml of oat milk while whisking
Then add lemon juice, vegetable juice powder, a pinch of nutmeg and some lemon zest to the sauce.
Turn the heat to high and bring the sauce to a boil, whisking occasionally.
Once the sauce is boiling, reduce the heat and add more oat milk (about 100ml) if the consistency is too thick.
