CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Sweet & Sour Cabbage Mushroom Filling for Dumplings

Ingredients

  • 2 tbsp. canola oil or sesame oil
  • 1 small onion, chopped
  • 3 cloves of garlic, minced
  • a ca. 2 cm long ginger, peeled and finely chopped
  • 1/2 small head of cabbage, finely chopped
  • 1 spring onion, finely chopped
  • 200 g mushrooms, finely chopped
  • 1 tsp. salt
  • 1 1/2 tbsp. Fame
  • 1 tablespoon. dark soy sauce
  • 1 tablespoon. apple cider vinegar
  • 2 tbsp. Brown sugar



Instructions

  1. Heat the canola oil / sesame oil in a saucepan over low-medium heat
  2. Add the chopped onion, garlic, ginger and cabbage. Mix well and cook for about 3-4 minutes or until the cabbage is tender.
  3. Then add the chopped mushrooms and spring onions and cook everything for another minute.
  4. After about 1 minute, add all the other ingredients (salt, flour, dark soy sauce, apple cider vinegar
  5. Add a little more salt if needed and start filling your meatballs.
  6. Enjoy!

notes

  • I like to add chili peppers after steaming the meatballs. Approximately. You will need 26 meatballs 100 ml of vegetable broth, 1 tbsp. sesame oil or canola oil and 1 tsp. chili pepper. Mix everything well and start pouring it over your hot meatballs.
