CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Garlic Rubbed Roasted Cabbage Steaks If you love cabbage, you are going to freak out about how good this is. Now, if you are on the fence about cabbage, you need to try this because this might be the recipe that converts you to a cabbage lover.

Ingredients
1 head of green cabbage
about 1.5 tablespoons olive oil
2-3 cloves garlic, smashed
salt and pepper
olive oil cooking spray, i didn’t have the olive kind, and used pam regular, it worked well.
Directions
1. Slice cabbage from top to bottom of core in 1 inch thick slices.
2. Rub the smashed garlic on both sides of the cabbage. Baste both sides of the cabbage with olive oil and sprinkle with salt and pepper to taste. Place in greased cookie sheet or baking pan sprayed with cooking spray, the olive oil spray is really good for this recipe.
3. Bake at 350* for 20 minutes, carefully flip rounds over and bake an additional 20 minutes or until golden brown and crispy.
