CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. I love to create meals that are low carb but still taste like the real thing and this snowball recipe does not disappoint, it’s really soft and it’s the same size as the regular. To lower the carb count and make it gluten free Almond Flour is used instead of normal flour and sweetener instead of sugar.

Ingredients:

  • 573g/ 4 1/2 cups Almond Flour
  • 13g/ 3 tsp Baking Powder
  • 1/4 tsp Salt 60g/
  • 1/3 cup Sweetener
  • 1 tsp Vanilla Extract
  • 135g/ 1/2 cup Heavy Cream
  • 3 Eggs 120g/
  • 1/2 cup Water
  • 100g Butter, softened

OVEN TEMP: 350F/175C Sugar Free Strawberry Chia Jam: 145g/ 1 cup Strawberries 3g/ 2 tbsp Sweetener 11g/ 1 tbsp White Chia Seeds 2-3 tbsp Water Syrup: 200g Sweetener 266g Water 1 tsp Strawberry Essence 1 tbsp Food Color (I used Rose Pink) Coconut Coating: 142g/ 2 cups Desiccated Coconut 1 tsp Food Color (I used Rose Pink)
