Keto Cinnamon Rolls
Who would have imagined there could be Iced Cinnamon Rolls on the Diet? Not me! These Keto Cinnamon Rolls are Keto, Low Carb, Gluten Free and Sugar Free. I was surprised how delicious they were, especially for being sugar free.

Ingredients
- 8 oz package Mozzarella cheese
- 3 oz cream cheese
- 2 eggs
- 2.5 cups almond flour
- 3 teaspoons of baking powder
- 2 teaspoons of baking powder
- 1 packet of yeast (optional)
Cinnamon Roll Filling
- 3 tablespoons of melted butter
- 3 tablespoons Pyure sweetener (grain or sweetener of your choice)
- 1 teaspoon cinnamon
Icing/Icing
- 1/2 cup Swerve’s Candies (or candies of your choice)
- This
- 1/4 teaspoon vanilla

Instructions
Bread Instructions:
- Place the mozzarella and cream cheese in a bowl and microwave until the cheeses are melted. Stir every 30 seconds until dissolved.
- Add the eggs to the cheese mixture and mix with a spoon.
- In a separate bowl, combine the dry almond flour, baking powder, baking soda, and yeast. Mix it well.
- Combine wet and dry ingredients and mix well with a spoon, it may take a few minutes to mix.
- Put the mixture on parchment paper and add another piece of greaseproof paper over the mixture. Next, take a rolling pin and roll to a 1/4 inch drop. It is better to be very thick than thin.
- Less than 1/4 inch and will stick to paper and not roll (learned from experience, lol,)
- Once the dough is rolled out, remove the top parchment paper and spoon over the melted butter spread with the back of the spoon, sprinkled with Pyure flavoring and cinnamon. (to connect
Thyme and cinnamon before adding to dough)Start rolling out the dough, don’t get mad, lol, it takes some time and it gets easier with practice, trust me 🙂 - Once the dough is rolled out, take a bread knife or sharp knife and cut into 1-inch slices and place on a greased tray.
- Bake at 400 degrees for about 15 minutes. While the fritters are in the pan, I usually grab a fork and set a roll apart to see how it’s done.
- Set aside to cool.
Icing/Icing Instructions
- Put the Swerve Confectioners in a bowl and start adding 1/4 tsp. Water each time until the glaze reaches your desired consistency. I know the amount of water is not specific, but you can’t go wrong, add water if your glaze is too thick, add more Swerve Confectioners if it’s too thin, it all depends on whether you want a thick, spreadable glaze. a drizzle secret 🙂
