CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. Cheesy White Bean Paste

Cheesy White Bean Paste

This one is made with a  cheesy white bean paste cooked vegetables and mashed avocado🍃

Ingredients:

  • 1 small (70g) carrot, peeled and sliced
  • 2 tbsp. tomato paste
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 4 tbsp. nutritional yeast
  • 800g Can white beans, rinsed and drained
  • Salt and pepper to taste



Directions:

  1. Add carrot slices to a small pot. Cover with water and cook for about 10 minutes or until soft. Drain and add to a bowl along with all the other ingredients.
  2. Mash with a potato masher or blend mixture in a food processor
  3. Spread mixture on 6 tortillas preheat a non stick pan over medium heat and add one tortilla
  4. Add some cooked vegetables (I like to use bell peppers, onion, kidney beans and corn), mashed avocado and another tortilla on top (side with bean paste facing down)
  5. Cook for 2-3 minutes, then flip over and cook for another 2 minutes
