CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Chocolate Waffles

Chocolate Waffles are easy to make, perfectly crisp on the outside, soft on the inside and filled with delicious chocolate flavor. These will be your new weekend favourite!

ingredients

LINEN EGG REPLACEMENT

  • 1 tablespoon flaxseed/ground flaxseed
  • 2 tablespoons of warm water

VEGAN BUTTERMILK SUBSTITUTE

  • 2 cups non-dairy milk
  • 2 tablespoons of lemon juice

ADDITIONAL MATERIALS

  • 2 cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 tablespoon of baking powder
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons vegan butter, melted
  • 1 tablespoon of vanilla extract
  • Optional: ¼ cup mini chocolate chips



Instructions

Make the Flax Egg: Combine the ground flax seeds and water in a small bowl and set aside until ready to use.

Make Vegan Buttermilk: Combine milk and lemon juice in a small bowl and let sit for five minutes.

Make the waffle:

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, mix the flour, cocoa powder, baking powder, brown sugar and cinnamon.
  3. In a separate small bowl, whisk together flax eggs, vegan buttermilk, melted butter, and vanilla extract.
  4. Add the wet ingredients to the bowl with the dry ingredients and mix just until combined – be careful not to over-mix! A few small lumps are fine. Fold in optional chocolate chips.
  5. Spray your waffle iron with nonstick spray and add enough dough to fill the waffle iron, leaving about 1 inch on the edge. I use 1 cup of batter in my 8” waffle iron. Bake the batter until the waffles are golden brown and crisp on the edges – about 3 minutes.
  6. Repeat with remaining waffles.
