CHEESY CAULIFLOWER FRITTERS Crispy cheese cauliflower fritters which are also keto, gluten free, low carb and wheat flour free. These make a great substitute for hash browns or potatoes for brunch.  I like making cauliflower fritters for brunch. They make a great substitute for hash browns or potatoes. Ingredients:  1   lb   cauliflower florets 1   cup   shredded cheddar cheese 2   large  eggs 2   tbsp   coconut flour 2   tbsp   finely chopped scallions   plus additional for garnish olive oil   for cooking cauliflower fritters sour cream   for garnish Instructions: Shred the cauliflower with a food processor or large cheese grater. Steam cauliflower until just tender. Mix in cheese with cauliflower while the cauliflower is still hot, until cheese is melted and evenly mixed in. Add in eggs, coconut flour and scallions. keto monte cristo breakfast casserole

This Keto Monte Cristo Breakfast Casserole makes a delicious low-carb breakfast with all the sweet and savory flavors of the classic Monte Cristo sandwich!

Ingredients

  • 3 cream cheese pancakes
  • 12 oz Canadian bacon
  • 1 1/2 cups shredded Gruyere or Swiss cheese
  • 1/3 cup Unsweetened Pancake Syrup, heated.

Instructions

  1. Grease a 9 x 9 baking sheet and arrange 4 layers of cream cheese pancakes on the bottom and half on the sides.
    Add a layer of Canadian bacon, then sprinkle with 1/2 cup of cheese.
  2. Repeat 2 more times until you have three layers – the top layer is cheese.
  3. Bake at 375 degrees (F) for 15 minutes or until thoroughly heated.
  4. Remove from the oven and pour the warm syrup evenly over it.
  5. Cut into 6 squares and serve.
  6. Optional – top with a runny hard-boiled or fried egg and syrup withut added sugar.
